Spiced Apple Rings

These cinnamon sugar apple rings are an easy breakfast addition or treat. Dipped in a batter and seared, they have a soft fluffy outside with a satisfying crunch inside. Apples are a great source of fiber, antioxidants and vitamins like C and A. They support healthy digestion, immune function and healthy vision.

Total time: 25 minutes 

Ingredients:

  • 2 apples, cored and sliced 
  • ¾ cup all-purpose flour 
  • 2 tsp. baking powder 
  • 1 tsp. sugar 
  • 1 pinch salt 
  • 2 tsp. cinnamon 
  • 2/3 cups milk 
  • 1 tbsp. vegetable oil 
  • 1 egg 
  • For dipping: 2 Tbsp. sugar and 1 tsp. cinnamon 

Instructions:

  1. In a bowl, mix flour, baking powder, sugar, salt, cinnamon milk, vegetable oil, milk and egg until smooth. 
  1. Heat a pan coated with a bit of vegetable oil over medium-low heat.  
  1. Dip apple rings in the mixture until evenly covered and add to pan. Sear on both sides until golden. 
  1. In another bowl, mix the dipping mixture of sugar and cinnamon. 
  1. While warm, dip the seared apple rings in the cinnamon sugar mixture to help it stick. Serve warm.
