As the heat of summer settles in, there’s nothing quite like a cold, refreshing dessert to cool you down. While many frozen treats are loaded with added sugars and ultra-processed ingredients, it’s surprisingly easy to make something indulgent and nourishing at home. Enter strawberry lemongrass sorbet — a naturally sweetened, vibrant dessert with wholesome ingredients.
Strawberries are a summer staple – naturally juicy, bright and rich in vitamin C, manganese and antioxidants. These nutrients help combat oxidative stress and inflammation while supporting immune health. The honey addssubtle floral notes that complement fresh fruit beautifully while lemongrass brings a subtle citrusy aroma and mild herbal flavor to this sorbet.

Ingredients:
- 2 cups frozen strawberries
- 2 Tbsp. lemongrass paste
- ÂĽ cup honey (add more to taste)
- Water as needed
Instructions:
- In a blender, combine frozen strawberries, honey and lemongrass paste. If the blender is having a difficult time running, add a little bit of water at a time and move the contents inside of the blender with the blender unplugged.
- Taste and see if the sweetness is to your liking, adding more honey if necessary.
- Once the texture is smooth, place in a freezer-safe dish that has a secure lid. Serve with fresh berries and a dollop of whipped cream. Alternatively, it can be frozen to be enjoyed later.
