Meatless Monday: Family Dinner Ideas

The New Year is upon us and lots of moms are probably
thinking about health or healthy resolutions.
An easy way to get your family to eat healthier is to start
the tradition of “Meatless Monday.” Luckily, there are lots of family friendly
ideas to get even the pickiest eater on board (and if your kids are like my
kid, meat is often a battle anyway!).
Here are some favorite “Meatless Monday” recipes you can try
in 2017. 
This is a big favorite around here. It’s quick, easy and
involves one pot (score!) and even better? The leftovers are great, too. You
can also customize it to your family’s tastes by adding more spices, omitting something
like corn and then adding toppings for people to choose from at the dinner
table (cheese, guacamole, green onion, olives etc). 
This is a simple meal that can also be customized. Add some
fruit or a healthy smoothie and you have a quick and satisfying dinner for
everyone. This also works as a healthy breakfast or lunch and another great
thing about egg toasts? You can eat them on the go, so make them and the kids
can eat them on the way to soccer. That’s cheaper – and healthier – than the
drive-through.
Trust me: You won’t miss the meat in these delicious white
bean “meat” balls and spaghetti. This is a super quick and easy meal too, and
it’s hearty and filling. Bonus? Your house will smell super yummy!
You can cut corners by using jarred sauce, too, if you are
short on time, or make zoodles out of zucchini to add more nutrients!
4. Falafel and hummus
Most grocery stores in this area carry falafel mix and some
even carry pre-made falafel. Mix up some falafel and grab some hummus, tabbouli
and garlic sauce. Roll up in a pita and serve with lentil soup or a crisp
salad. 

Who doesn’t love a nice hot bowl of chili on a cold winter
day? You can also do this one in the crock pot, meaning your dinner will be
ready when you get home. That’s a mom win! This recipe for chili is so good,
you won’t even miss the meat. It’s chock full of veggies and beans, too. Don’t
forget the cornbread!
