Summer Flavor Returns to the Rusty Bucket – Strawberry Shortcake Recipe

Nothing says summer like cool, refreshing desserts, right?  The Rusty Bucket has added a Strawberry Shortcake to their menu for a limited time so guests can enjoy this quintessential summer treat.  We tried it out last weekend and we all agree they have mastered this dessert.

Strawberry Shortcake Recipe

Yields one Strawberry Shortcake

Ingredients:
– 1 shortcake biscuit, torn
– 3-oz. vanilla ice cream
– 5-oz. strawberries
– 1-oz. whip cream

Directions:

In a chilled pint glass, place 2-oz. strawberries in the bottom of a frozen glass. Then place the torn biscuit in the glass lightly pressing into strawberries. Add 2-oz. more of strawberries. Then place one leveled scoop of ice cream on top, with the flat side down. Top the ice cream with strawberries. Garnish with whip cream and drizzle very top with strawberry syrup.

Shortcake Biscuit

Ingredients:
– 2 ½-pounds Bisquick mix
– 1 cup sugar
– 3 cups buttermilk
– 1 Tablespoon sugar

Directions:

Add one cup sugar with Bisquick mix add buttermilk. Blend until just incorporated. Using an ice cream scoop or similarly sized spoon place batter on parchment lined sheet tray. Sprinkle with remaining sugar and bake at 400 degrees until light golden brown. Remove from heat and let cool. Once cool, remove from tray and store in an air-tight container.
