Thin Mint Cookie Truffles

As the mom of a Girl Scout, we find ourselves with enough cookies to last us for the next 365 days. Luckily, these tasty treats can be frozen for use anytime throughout the year. Thin Mint Cookie Truffles

Girl Scout thin mint cookies and cake batter join forces to create the ultimate chocolate mint truffle

  • 1 box Duncan Hines Classic Yellow Cake Mix ((calls for 1 cup water, 1/3 cup vegetable oil, 3 large eggs))
  • 1 sleeve Girl Scout Thin Mint Cookies
  • 1 cup White Chocolate Chips
  • 1 cup Milk Chocolate Chips
  1. Bake Duncan Hines Classic Yellow Cake mix according to instructions on box

  2. While cake is baking, crush 1 sleeve of Girl Scouts Thin Mint cookies in bowl

  3. Remove cake from oven once fully baked (insert toothpick into cake to check for completion, if toothpick comes out clean, cake is done). Allow to cool 15 minutes before crumbling.

  4. Add crushed Thin Mint cookies to cake crumble and mix together.

  5. Form 1 1/2in balls of cake and cookie mixture and place on sheet of wax paper

  6. In small microwaveable bowl, microwave chocolate chips on high 60 seconds or until fully melted

  7. Use fork or skewer to hold truffle above bowl as you spoon chocolate over each one making sure to cover truffle completely.

  8. Place chocolate coated truffles on wax paper and allow to set for approximately 15 minutes at room temperature.
