Overnight Oats

On hot mornings, or even in the dead of winter, I love a bowl of cold oatmeal. Now, stay with me. This isn’t the clumpy, gooey oatmeal your mom used to make. This is overnight oats. The oatmeal soaks up the sweets and milk overnight and in the morning is a refreshing, filling breakfast fit for the fanciest bed and breakfast. It goes as follows…

2 cups rolled oats (not instant)

2 cups vanilla soy milk (any milk would work too, but I prefer soy milk in this)
1/4 cup wheat germ
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup dried cherries/berries/raisins
1 to 2 cups of other diced fresh ruit (I adore strawberries in this)
Mix dry ingredients well to blend.  Add in milk.  Cut up dried fruit and add to mixture.  Diced fresh fruit can be added at this time or in the morning.
Let sit, covered, in fridge, overnight.  Enjoy cold on a  summer morning!  Or heat up on a cold morning!
